This recipe makes two servings as a side to a protein dish, or one serving as a main course. If having as a main course, you might add protein sources such as meat, seeds, nuts, or Alter Whey (see below).
Ingredients

1 bunch dino kale

1/2 tsp sea salt

2 tsp fresh lemon juice

1 large tomato, chopped

1 avocado
-
1 stalk celery
-
3 Tbsp olive oil

black pepper
Preparation

Remove kale stems and chop leaves into bowl.

Massage with salt to wilt leaves.

Add lemon, massage again.

Add tomato.

Blend avocado, olive oil, & celery in a blender, and mix into salad.

Add freshly ground black pepper to taste.

Optional: Add 2-3 Tbsp Alter+Whey as you blend the avocado, oil, and celery together. You may need to add a bit of water to create the right consistency to coat the kale leaves.
