Ingredients
- 1 head of Romanesco cauliflower
- 3 Tbsp olive oil
- Sea salt
- Freshly ground black pepper
- Paprika or red pepper flakes (optional)
Preparation

Preheat oven to 400F. Line baking sheet with parchment paper, if you have it.
- Cut the Romanesco florets (as you would with a cauliflower) into a large bowl and season with sea salt & black pepper, plus paprika / red pepper flakes if using.
- Add the olive oil and toss.
- Lay Romanesco in a single layer on the baking sheet and roast in the oven for 20 minutes, flipping the pieces over at the 10-minute mark.
